Chocolate Honeycomb With Pistachio Crumb Recipe From France

Ingredients

2 tbsp white sugar
2 tbsp golden syrup
1 tsp baking soda
75g dark chocolate
1 tbsp chopped pistachio nuts

Method

1. In a saucepan melt the sugar and golden syrup  over a low heat and bring to the boil until the liquid is a light caramel colour, you need to keep a close eye on it as it can burn very quickly once it reaches the right stage and then it’s no good. Also molten sugar is incredibly hot, don’t spill it as it can cause nasty burns.

2. Remove the pan from the heat and add the baking soda, whisking to ensure there are no lumps of soda. The mixture will froth up!

3. Pour the mixture onto a baking mat or baking tray lined with baking paper and leave to cool

4. Melt chocolate in a bain marie (basically put chocolate in a bowl on top of a saucepan of boiling water) then pour over the honeycomb when it is set and completely cooled.

5. Sprinkle the chopped pistachio nuts onto the chocolate while it is still melted so that it sticks. Once the chocolate is set, break the chocolate honeycomb into pieces and eat!
